Episode 67: Empty Nests, New Puppies & Questioning Our Sanity

The Fishes are back this week, and let’s just say… life changes are coming at us fast. Between college drop-offs, quiet houses, and one very impulsive (and very furry) decision, this episode is all about transitions, chaos, and finding joy in the mess.

When the Nest Gets Too Quiet

Lynne had a one-two punch this month: sending her youngest off to college and suddenly realizing her house was just too quiet. The solution? A brand-new puppy. Because nothing says “coping mechanism” like chewed-up shoes, midnight potty breaks, and managing Teddy the puppy-hating dog she alredy has.

She calls it sanity-saving. We’re not so sure.

What’s for Dinner

This week it's Nancy's simple mid-week go-to that doesn't heat up the kitchen too much.

Potato Frittata

INDGREDIENTS:

2 pieces of diced bacon

2 medium potatoes, peeled and diced

1/2 an onion, diced

8 large eggs

3 tablespoons of whatever kind of milk you use

1 tsp dijon mustard

1 tsp kosher salt

1/2 tsp black pepper

1/3 cup of cheese (use your favorite, I typically use mozzerella or dairy free mozzerella style for my lactose-free family)

1 cup roughly chopped spinach

You could add bell pepper, mushroom whatever else you like.

DIRECTIONS:

Preheat the oven to 350ºF.

Cook the bacon in an oven-safe skillet until the fat is rendered and the bacon is crisp. Spoon the bacon onto a plate and set it aside. Add the potatoes and onion to the bacon grease and cook until tender and browned, about 8 to 10 minutes.

While the potatoes and onions are cooking, whisk together the eggs, Dijon mustard, milk, salt, and pepper until well combined. Stir in the cheese.

Once the potatoes and onions are tender, add the spinach to the skillet. Stir and cook until the spinach is just wilted, about 1 to 2 minutes.

Return the bacon to the skillet and stir to combine. Carefully pour the egg mixture into the skillet.

Bake for 15 to 20 minutes, or until the eggs are set. Slice and serve immediately.
