Episode 57 Show Notes: Tattoos, Road Trips & the Art of Letting Go

MIMI’S CHICKEN TETRAZINI INGREDIENTS

4 Chicken breasts, cubed

1/2 Cup butter

2 cups chicken broth

1 cup white wine

2t basil

2t oregano

2 cloves garlic, pressed (or 1t garlic powder)

2t salt

2T corn starch

2 cups Half and Half

2 cups mozzarella cheese, shredded

1 cup parmesan cheese

16 oz thin mostaccioli


DIRECTIONS:

Sauté chicken in butter, add broth, wine and spices, stir and simmer for thirty to sixty minutes. Stir corn starch into half and half until smooth. Slowly add half and half to simmering chicken, continue to simmer and stir until sauce begins to thicken. Cook pasta according to package directions, drain

Add drained pasta to chicken

Stir in parmesan cheese to chicken mixture.

In an oven-safe dish, layer half of chicken mixture and pasta, then half of the mozzarella cheese. Then another round of chicken, pasta and cheese.

Place in 350º oven until chicken and pasta are heated thoroughly and cheese is melted.
