What's For Dinner:

Risotto à la Three Lil Fishes

Inspired by Ina Garten. A meal that feels fancy… but is actually simple, flexible, and affordable.

Basic Risotto Formula

  • ½ cup rice per person

  • 1.5 cups broth per ½ cup rice (reserve 1 cup for the end)

  • ¼ cup dry white wine per 1 cup rice

  • 1 small onion per cup rice (finely diced)

  • 1 clove garlic per cup rice

  • 1 cup frozen peas (optional)

  • ½ cup grated Parmigiano per cup rice

  • 1 tbsp butter per cup rice (diced)

Instructions

Preheat oven to 350°F.

In a Dutch oven, combine rice, warm broth (hold back 1 cup), onion, and garlic. Stir, cover, and bake for 45 minutes.

Remove from oven and add remaining broth, cheese, butter, and any extras.

Stir vigorously for 3 minutes—this is what makes it creamy.

Serve as-is or top with grilled chicken, shrimp, or vegetables.

Simple. Affordable. And it feels like something you’d order at a restaurant.
